Cheese cake – a creamy cake with nice crust outside is a famous dessert around the world. The cake which is rich and complex in flavor actually is easy to make if you follow the recipe. From the traditional cheese cake, there are several versions developed so far. In order to balance the greasy flavor of cream cheese, cheese cake is innovated with combination with fruits and strawberry is one of the perfect matches. And guess what; today recipe will be delicious creamy strawberry cheese cake!
Ingredients (prep will take about 1 hour)
- 1 ¼ cup of Graham Cracker Crumbs
- ¼ cup of White Sugar
- 2 teaspoons of Ground Cinnamon
- 1/3 cup of Butter (melted)
- 2 (10 ounces) packages of Frozen Sweetened Strawberries (thawed and drained)
- 1 tablespoon of Cornstarch
- 3 (8 ounces) packages of Cream Cheese (softened)
- 1 (14 ounces) can of Sweetened Condensed Milk
- ¼ cup of Lemon Juice
- ½ teaspoon of Vanilla Extract
- 3 Eggs
- 1 tablespoon of Water (optional)
Making (process will take about 45 minutes)
Step 1 – make the cake crust: In a large bowl add 1 ¼ cup of graham cracker crumbs with ¼ cup of sugar, 2 teaspoons of ground cinnamon, 1/3 cup of melted butter and combine all the ingredients together. When the mixture is well mixed and moist, transfer it to an ungreased 9-inch springform pan. Press the crumbs against the bottom of the pan so that you have a nice even layer of crust. Use the back of your spoon is a small tip for you. Then put the crust into the fridge for about 30 minutes for the crust to firm.
Step 2 – preheat the oven: Before turn to the next step, remember to preheat your oven to 300 degrees F (150 degrees C)
Step 3 – make strawberry sauce: In a blender or food processor, add 2 (10 ounces) packages of frozen sweetened strawberries, thawed and drained, with 1 tablespoon of cornstarch. Put the blender lid on and puree the strawberries until they become a smooth mixture. Pour the strawberry sauce into a saucepan.
Put the saucepan onto the stove and bring it to a boil over high heat. You should stir constantly until the sauce gets thick and shiny which will take about 2-3 minutes. When the sauce is thickened, remove it from the heat. Pour 1/3 cup of strawberry sauce into a bowl and set aside for chill. Cover the remaining sauce with plastic wrap and store it in the fridge for serving later.
Step 3 – bake cheese cake: In a mixing bowl, add 3 (8 ounces) packages of softened cream cheese. Beat the cheese with an electric mixer until the cream turns light and fluffy. Slowly add 1 (14 ounces) can of sweetened condensed milk while gradually beat the cream. Then add ¼ cup of lemon juice and ½ teaspoon of vanilla extract into the mixture. Turn the mixer to slow speed mode and add 3 eggs in the bowl and beat it with the cream. When the eggs are combined with the cream, stop beating. Don’t over-beat your cream. Take the crust out of the fridge. Pour half of the cream cheese mixture into the springform pan. Then add half of chilled strawberry sauce onto the cream cheese to form a layer. After that, continue to add the remaining cream cheese mixture onto the strawberry layer and finish with the remaining strawberry sauce. You can use a knife to swirl the strawberry sauce into patterns so the cake will look nice later.
Put the cake into the preheated oven for about 45 to 50 minutes. Then take the cake out, let it chill for about 10 minutes on a wire rack. Then use a thin knife and run around the edge of the pan to separate the cake crust from the pan. Continue to cool for another 1 hour in the room temperature and store the cake overnight in the fridge.
The cake is served cool. Cut into nice slices for serving. You can top with the reserved strawberry sauce, some fresh sliced strawberry and whipping cream. The cake will creamy with the cream cheesy and nice crust. It is better to enjoy the cake with some tea or drink.
